  • 2 tbsp lemon juice
  • 2 tbsp cornstarch mixed with 2 tbsp water
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • ½ cup white chocolate, melted and cooled
  • 23 tbsp milk
  • 1 tsp vanilla extract
  • Fresh raspberries
  • White chocolate curls or shavings
  • Mint leaves

Instructions

  1. Preheat oven to 350°F (175°C) and prepare three 8-inch round cake pans.
  2. Whisk flour, baking powder, and salt in a bowl; set aside.
  3. In a large bowl, cream butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla and melted white chocolate.
  4. Gradually mix dry ingredients with milk until just combined.
  5. Divide batter among prepared pans and bake for 25–30 minutes or until a toothpick comes out clean. Cool completely.
  6. For the raspberry filling, heat raspberries with sugar and lemon juice until soft; thicken with cornstarch slurry and cool.
  7. For frosting, beat butter until creamy; gradually add powdered sugar and melted white chocolate until smooth.
  8. Assemble by layering cake with frosting and raspberry filling; frost the top and sides.
