½ pound turkey strips (diced)
3 medium shallots (thinly sliced)
1 teaspoon Dijon mustard
16 ounces frozen peas
1 pear (diced)
1 lemon (zested and juiced)
½ cup chopped parsley
Freshly ground black pepper (to taste)
Instructions
Prepare the pear: Peel and dice the pear, tossing it with lemon juice in a bowl.
Cook the turkey: In a skillet over medium heat, cook turkey strips until golden brown, then drain excess fat.
Sauté shallots: Add sliced shallots to the skillet, cooking for about one minute before stirring in Dijon mustard.
Combine ingredients: Add peas and prepared pears to the skillet, stirring for about five minutes until warmed through.
Finish and serve: Stir in half of the turkey strips along with parsley and black pepper. Transfer to a serving bowl, topping with remaining turkey strips and lemon zest.
