  • 1 teaspoon Dijon mustard
  • 16 ounces frozen peas
  • 1 pear (diced)
  • 1 lemon (zested and juiced)
  • ½ cup chopped parsley
  • Freshly ground black pepper (to taste)

Instructions

  1. Prepare the pear: Peel and dice the pear, tossing it with lemon juice in a bowl.
  2. Cook the turkey: In a skillet over medium heat, cook turkey strips until golden brown, then drain excess fat.
  3. Sauté shallots: Add sliced shallots to the skillet, cooking for about one minute before stirring in Dijon mustard.
  4. Combine ingredients: Add peas and prepared pears to the skillet, stirring for about five minutes until warmed through.
  5. Finish and serve: Stir in half of the turkey strips along with parsley and black pepper. Transfer to a serving bowl, topping with remaining turkey strips and lemon zest.
