  • 2 cups water or chicken broth
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • ½ cup salsa
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • fresh cilantro (optional)
  • lime wedges (optional)

Instructions

  1. Rinse the rice under cold water until clear. In a pot, combine rice and water or chicken broth. Bring to a boil, lower heat, cover, and simmer for 15-20 minutes until fluffy.
  2. In a skillet over medium heat, heat olive oil and brown the ground beef or turkey (5-7 minutes). Add taco seasoning according to package instructions.
  3. Stir in black beans and corn; cook for an additional 3-5 minutes until heated through.
  4. Layer cooked rice in bowls, top with meat mixture, and garnish with diced tomatoes, lettuce, cheese, salsa, and any other desired toppings.
