  • 45 pounds beef brisket
  • 2 large yellow onions, thinly sliced
  • 6 cloves garlic, minced
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 1 cup beef broth
  • 1/4 cup apple cider vinegar
  • 1 tablespoon smoked paprika
  • 1 tablespoon ground cumin
  • 1 tablespoon black pepper
  • 1 teaspoon salt

Instructions

  1. Trim excess fat from the beef brisket and rub with smoked paprika, cumin, black pepper, and salt.
  2. Sauté sliced onions in oil over medium heat until caramelized (15-20 minutes); add minced garlic and cook for an additional 2-3 minutes.
  3. Layer caramelized onions at the bottom of a slow cooker or Dutch oven. Place the seasoned brisket on top.
  4. In a bowl, mix brown sugar, soy sauce, beef broth, and apple cider vinegar; pour over the brisket.
  5. Slow cook on low for 8-10 hours or bake covered at 300°F (150°C) for 3-4 hours.
  6. Let rest for 20 minutes before shredding; mix back into the cooking liquid.
