  • 5 pounds sweet potatoes
  • 1 cup water
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ cup melted butter
  • 1 cup brown sugar
  • 23 teaspoons salt (or to taste)
  • ½ cup heavy cream (or plant-based milk)
  • ½ cup flour
  • 1 cup chopped pecans
  • 34 cups mini vegan vegan marshmallows

Instructions

  1. Cook sweet potatoes until tender using boiling water or a slow cooker.
  2. Preheat your oven to 375°F (190°C). Mash the sweet potatoes until smooth and mix in eggs, vanilla, melted butter, brown sugar, salt, and heavy cream.
  3. Spread the mixture into a greased baking dish.
  4. In a bowl, combine brown sugar, flour, melted butter, and pecans for the topping; sprinkle over the sweet potato mixture.
