  • 4 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1 pound lean ground turkey
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ½ cup black beans (drained and rinsed)
  • ½ cup canned corn (drained)
  • ½ cup diced tomatoes
  • Toppings: chopped fresh cilantro, shredded cheese, Greek yogurt (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Wash sweet potatoes and pierce them several times with a fork. Bake directly on the oven rack for 45–50 minutes until fork-tender.
  2. In a skillet, heat olive oil over medium heat. Add diced onion and sauté for 3–4 minutes until translucent.
  3. Stir in minced garlic and cook for another 30 seconds. Add ground turkey and cook until browned, about 5–7 minutes.
  4. Season turkey with smoked paprika, chili powder, cumin, sea salt, and black pepper; mix well.
  5. Fold in black beans, corn, and diced tomatoes; let simmer for about 5–7 minutes.
  6. Once sweet potatoes are done baking, slice them lengthwise and gently mash their flesh with a fork.
  7. Spoon turkey mixture into each sweet potato half and top with shredded cheese. Return to the oven for an additional 5 minutes to melt cheese.
  8. Garnish with fresh cilantro and optionally add Greek yogurt before serving.
