  • 4 ears of corn, husks and silk removed
  • 2 tbsp butter, melted
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup crumbled cotija cheese or substitute
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • 1/4 tsp chili powder (optional)
  • 1 cup long-grain white rice
  • 2 cups water
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 avocado, diced
  • Hot sauce, to taste (optional)
  • Lime wedges, for serving

Instructions

  1. Marinate cubed chicken in olive oil and spices.
  2. Heat a skillet over medium-high heat; cook chicken until golden brown.
  3. Prepare corn by grilling, boiling, or roasting; cut off kernels.
  4. Mix corn with mayonnaise, sour cream, cheese, cilantro, lime juice, and chili powder.
  5. Cook rice according to package instructions.
  6. Assemble bowls with rice as the base, topped with chicken, street corn mixture, black beans, diced avocado, and optional hot sauce.
