  • 1 cup (227 g) unsalted butter, very softened
  • 2 3/4 cups (344 g) all-purpose flour, spooned and leveled

  • 1/4 cup (50 g) granulated white sugar
  • 1 cup (200 g) granulated white sugar
  • 3 tbsp (38 g) granulated white sugar
  • 1/2 tsp vanilla
  • 2 tsp vanilla
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup (50 g) granulated white sugar, for rolling dough in

Instructions

  1. For the cheesecake filling, beat together cold cream cheese, granulated sugar, and vanilla until smooth. Set aside.
  2. Toss diced strawberries with sugar and let sit for 10 minutes.
  3. In a separate bowl, cream softened butter and sugar until fluffy. Add egg and vanilla, mixing well.
  4. Gradually incorporate flour, baking powder, baking soda, and salt until just combined.
  5. Fold in strawberries gently into the cookie dough.
  6. Preheat oven to 350°F (175°C). Scoop dough portions, flatten slightly, place a teaspoon of filling in the center, seal, and roll in sugar before placing on baking sheets.
  7. Bake for about 11 minutes until lightly golden around edges.
