  • 450g flank or sirloin steak
  • 1½ cups whole milk
  • 2 cups shredded cheddar cheese
  • 1 cup long-grain white rice
  • 2 cups broth or water
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 2 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper, to taste
  • 2 tbsp butter
  • 2 garlic cloves, finely chopped
  • Fresh cilantro, chopped
  • Lime wedges
  • Avocado slices
  • Sliced jalapeños

Instructions

  1. Prepare the steak by patting it dry and seasoning with olive oil, paprika, cumin, garlic powder, salt, and pepper.
  2. Sear the steak in a hot skillet for about 4–5 minutes per side until cooked to your liking. Let rest before slicing thinly.
  3. Rinse the rice under cold water, toast in olive oil with garlic powder, then add broth or water and cook until fluffy.
  4. For the queso sauce, melt butter in the same skillet, sauté garlic, then gradually whisk in milk and cheeses until smooth. Season as desired.
  5. Assemble by layering rice on plates topped with sliced steak and queso sauce; garnish as desired.
