  • 1 lb ground beef (80/20)
  • 2 cups fresh spinach
  • 8 oz low-moisture mozzarella (cut into cubes)
  • 3 cloves garlic (minced)
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Sauté minced garlic in olive oil until fragrant, then add spinach and cook until wilted. Cool slightly and squeeze out excess moisture.
  2. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, salt, pepper, egg, and prepared spinach. Mix gently.
  3. Form the mixture into balls around cubes of mozzarella.
  4. Sear meatballs in olive oil over medium heat until golden brown on all sides.
  5. Finish cooking by covering the skillet or transferring to a preheated oven at 375°F for 10–12 minutes.
