  • 16 jumbo pasta shells
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 4 cups fresh spinach
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese, divided
  • 1 egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups marinara sauce

Instructions

  1. Cook the jumbo pasta shells in salted boiling water until al dente (8-10 minutes). Drain and rinse under cold water.
  2. In a skillet, heat olive oil over medium heat. Sauté garlic for about 30 seconds then add spinach until wilted. Let cool.
  3. In a large bowl, mix ricotta cheese, half of both mozzarella and Parmesan, cooled spinach mixture, egg, salt, and pepper until well combined.
  4. Spoon filling into each shell generously.
  5. Spread marinara sauce on the bottom of a baking dish and arrange stuffed shells on top. Pour remaining sauce over them and sprinkle with remaining cheeses.
  6. Cover with foil and bake at 375°F (190°C) for 25 minutes; uncover and bake an additional 10 minutes until golden.
