  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups vegetable broth
  • 1 cup coconut milk
  • Fresh parsley or cilantro, chopped (optional garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion and minced garlic until soft, about 5 minutes.
  2. Stir in pumpkin puree, cumin, smoked paprika, cayenne pepper, nutmeg, salt, and black pepper. Cook for an additional minute.
  3. Add vegetable broth and bring to a gentle simmer for 10 minutes.
  4. Blend the soup until smooth using an immersion blender or regular blender.
  5. Return to heat and stir in coconut milk. Warm through for another 5 minutes.
