Ingredients

Scale
  • 1 lb chicken breast or thighs
  • 3 tablespoons maple syrup
  • 2 tablespoons sriracha
  • 1 tablespoon soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • 1 cup jasmine rice
  • 1 cup coconut milk
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnishing
  • Lime wedges for garnishing

Instructions

  1. Prepare the coconut rice by rinsing jasmine rice until water runs clear. In a saucepan, combine rice, coconut milk, water, and a pinch of salt. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes. Let sit for an additional 5 minutes before fluffing.
  2. While the rice cooks, heat olive oil in a skillet over medium heat. Season chicken with salt and pepper, then cook until golden brown (6–8 minutes).
  3. Whisk together maple syrup, sriracha, soy sauce, apple cider vinegar, garlic, and ginger in a bowl. Pour over cooked chicken and stir to coat evenly. Cook for an additional 2–3 minutes until sauce thickens.
  4. Serve the spicy maple chicken over coconut rice and garnish with fresh cilantro and lime wedges.
