  • 8 mini or Persian cucumbers
  • 1 green onion (ends trimmed and finely sliced)
  • Sesame seeds
  • 1 ½ tbsp low-sodium soy sauce (or tamari)
  • 1 ½ tbsp rice vinegar (or apple cider vinegar)
  • 1 tsp sesame oil
  • 1 tbsp honey (or maple syrup)
  • 2 large garlic cloves (minced)
  • 1 tsp crushed red chili flakes

Instructions

  1. Wash and dry the cucumbers. Cut off their ends. For accordion slices, place one cucumber between two chopsticks and slice diagonally without cutting all the way through; flip and cut again.
  2. In a small bowl, whisk together soy sauce, vinegar, sesame oil, honey (or maple syrup), minced garlic, and chili flakes.
  3. Pour the dressing over the cucumbers and mix gently to combine. Garnish with sliced green onions and sesame seeds before serving.
