  • 3/4 cup brown sugar

  • 1/4 cup honey
  • 1 1/2 cups grated carrot
  • 1 cup grated zucchini
  • 1 cup chopped walnuts (optional)

  • 1 teaspoon baking powder
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon baking soda
  • 8 oz reduced-fat cream cheese
  • 1 cup icing sugar
  • zest of 1 lemon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the eggs, brown sugar, canola oil, honey, and vanilla extract until smooth.
  3. Fold in the grated carrots, zucchini, and walnuts.
  4. In another bowl, combine flour, baking powder, ground ginger, and baking soda. Gradually mix this dry blend into the wet ingredients until just combined.
  5. Pour the batter into a greased baking pan and bake for about 25 minutes or until a toothpick comes out clean.
  6. While cooling, beat together cream cheese, icing sugar, and lemon zest for the frosting.
  7. Once cooled completely, spread the frosting over the bars. Cut into squares and serve.
