  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup unsalted butter (room temperature)
  • 1½ cups granulated sugar
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup whole milk
  • ½ cup raspberry preserves (slightly warmed)
  • 2 cups sweetened shredded coconut

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a dome-shaped pan.
  2. In one bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, cream the butter and sugar until fluffy. Add eggs one at a time and stir in vanilla.
  4. Gradually mix in the dry ingredients alternating with milk until just combined.
  5. Pour half the batter into the prepared pan, add warmed raspberry preserves, then top with the remaining batter. Swirl gently.
  6. Bake for 45–55 minutes or until a toothpick comes out clean. Cool for 10 minutes before transferring to a wire rack.
  7. Once cooled, brush lightly with water and coat with shredded coconut.
