  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 small yellow onion, finely diced
  • 10 oz cremini mushrooms, sliced
  • 8 oz cream cheese
  • 3/4 cup Parmesan cheese, finely grated
  • 1/2 cup Gruyère cheese, grated
  • 2 large eggs, divided
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves (or 1/2 tsp dried)
  • Salt and black pepper, to taste
  • 1/4 cup dry white grape juice (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Heat olive oil and butter in a skillet over medium heat. Sauté onions until soft (about 5 minutes).
  3. Add garlic and mushrooms; cook until browned (approximately 8 minutes). Season with thyme, salt, pepper, and grape juice (if using).
  4. Stir in cream cheese and Parmesan until creamy; mix in one beaten egg.
  5. Unroll puff pastry; cut diagonal strips along the edges while leaving the center intact. Fill with mushroom mixture.
  6. Fold ends of pastry and braid the strips over the filling.
  7. Brush with remaining beaten egg and bake for about 20–22 minutes until golden brown.
  8. Let cool for ten minutes before slicing and garnishing with fresh parsley.
