  • 4 medium apples
  • 3 tbsp salted butter
  • 12 tbsp apple cider
  • 1/3 cup light brown sugar, packed
  • 1 and 1/4 tsp cinnamon

  • 12 tsp lemon juice (to taste)
  • 2 tsp cornstarch
  • 2 tsp water
  • 3 cups cinnamon graham cracker crumbs
  • 1/2 cup + 3 tbsp salted butter, melted
  • 32 ounces cream cheese, at room temperature
  • 1 and 1/2 cups granulated sugar
  • 4 large eggs, at room temperature
  • 2 tsp vanilla extract
  • 1 and 1/2 tsp cornstarch
  • 3/4 cup full-fat sour cream, at room temperature
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp ground cloves
  • 1/4 cup all-purpose flour
  • 1/2 cup old-fashioned whole rolled oats
  • 1/4 cup brown sugar, packed
  • 1/2 tsp cinnamon
  • 1/8 tsp salt
  • 1/4 cup cold salted butter, cubed
  • 1 cup granulated sugar
  • 6 tbsp salted butter, cubed
  • 1/2 cup + 1 tbsp heavy cream
  • pinch of flaky sea salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Prepare the apple filling by cooking sliced apples with butter, apple cider, brown sugar, and spices until tender.
  3. Combine graham cracker crumbs and melted butter to form the crust; press into the bottom of a springform pan and bake for 10 minutes.
  4. For the cheesecake filling, blend cream cheese and sugar until smooth; add eggs one at a time, then mix in vanilla, sour cream, and spices.
  5. Layer half of the cheesecake batter in the crust, add the apple filling, then top with remaining batter.
  6. Bake in a water bath for about 1 hour and 30 minutes until set with a slight wobble in the center.
  7. Chill overnight before serving topped with crumble and salted caramel.
