  • 1 pound cherry tomatoes
  • 1 head garlic
  • 3 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 pound pasta (such as spaghetti)
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh basil leaves, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon balsamic vinegar (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse cherry tomatoes and pat dry. Slice off the top of the garlic head.
  3. In a large mixing bowl, toss the tomatoes with 2 tablespoons of olive oil, salt, pepper, and red pepper flakes.
  4. Spread the seasoned tomatoes on a lined baking sheet with the garlic cut side up. Drizzle with remaining olive oil and sprinkle with salt.
  5. Roast in the oven for 25-30 minutes until blistered and aromatic.
  6. While roasting, cook pasta in salted boiling water according to package instructions until al dente.
  7. After roasting, squeeze roasted garlic into a large bowl, add tomatoes along with their juices, and mash gently.
  8. Stir in remaining olive oil, balsamic vinegar if using, and season as needed.
  9. Toss cooked pasta in the tomato-garlic mixture until well combined.
  10. Finish with chopped basil and serve hot topped with Parmesan cheese.
