  • 1 whole chicken (about 45 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh rosemary
  • Zest and juice of 2 large oranges
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • 1 small onion, quartered
  • 1 cup chicken broth

Instructions

  1. In a bowl, whisk together olive oil, garlic, thyme, rosemary, orange zest and juice, honey, soy sauce, salt, and pepper.
  2. Place the chicken in a resealable bag or bowl; pour the marinade over it. Coat well and marinate in the refrigerator for at least an hour or overnight for enhanced flavor.
  3. Preheat your oven to 375°F (190°C).
  4. Stuff the cavity of the marinated chicken with onion quarters. Transfer to a roasting pan and pour remaining marinade over the top along with chicken broth.
  5. Roast in the preheated oven for about 1 hour and 15 minutes, basting halfway through with pan juices until the skin is golden brown and crispy.
  6. Let rest for 10-15 minutes before carving.
