  • 1 large egg
  • 1/2 cup unsalted butter, melted
  • 1 cup pumpkin puree
  • 8 oz cream cheese, softened
  • 2 large eggs (or egg substitute)
  • 1 tsp vanilla extract
  • 1/2 cup unsalted butter, melted
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 4 cups powdered sugar
  • 1/4 cup brown sugar, packed

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. In a mixing bowl, combine the yellow cake mix, melted butter, egg, pumpkin puree, and vanilla extract until well blended.
  3. In another bowl, beat together the cream cheese, eggs (or substitute), remaining pumpkin puree, melted butter, cinnamon, nutmeg, and cloves until smooth.
  4. Pour the cake batter into the greased pan and layer with the cream cheese filling on top.
  5. Bake for 40-45 minutes until set and golden brown.
  6. Allow to cool before whipping up the frosting with softened cream cheese and powdered sugar. Spread generously over the cooled cake.
