  • 2 large eggs
  • 1 cup heavy cream
  • 1/3 cup brown sugar
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1/8 teaspoon salt

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, whisk together pumpkin puree, brown sugar, maple syrup, and eggs until smooth.
  3. Stir in heavy cream, vanilla extract, pumpkin pie spice, and salt until fully combined.
  4. Pour the mixture evenly into ramekins.
  5. Place ramekins in a baking dish and add hot water halfway up their sides.
  6. Bake for 35–40 minutes until just set but slightly jiggly in the center.
  7. Allow to cool completely before refrigerating for at least 2 hours.
