  • 1 cup grated Parmesan cheese
  • ½ cup breadcrumbs (preferably panko)
  • 12 oz pasta (spaghetti or penne)
  • ½ cup basil pesto
  • 2 tablespoons olive oil
  • Salt and pepper

Instructions

  2. Coat each chicken breast in the breadcrumb mixture. Heat olive oil in a skillet over medium heat and fry chicken for 5-7 minutes per side until golden and cooked through.
  3. While chicken cooks, boil salted water and cook pasta according to package instructions until al dente; drain.
  4. Toss drained pasta with pesto, adding lemon juice if desired. If too thick, add reserved pasta water.
