  • 2 cups basmati rice
  • 1 teaspoon saffron threads
  • 1 tablespoon hot water
  • Zest of 1 medium orange (or 1/4 cup candied orange peel)
  • 1/2 cup dried cranberries
  • 1/2 cup slivered almonds
  • 1/2 cup chopped pistachios
  • 1 medium carrot, julienned
  • 1 large onion, thinly sliced
  • 3 tablespoons ghee
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • Salt to taste

Instructions

  1. Rinse basmati rice under cold water until clear. Soak in salted water for 30 minutes.
  2. Sauté onions in melted ghee until caramelized. Add carrots, orange zest, dried fruits, nuts, cinnamon, and cardamom; cook until fragrant.
  3. Boil a pot of water and parboil soaked rice for 5–7 minutes. Drain.
  4. Layer rice and fruit-nut mixture in the same pot. Drizzle dissolved saffron over the top.
  5. Cover with a towel-wrapped lid and steam on low heat for 30–45 minutes.
  6. Fluff gently with a fork before serving.
