  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 3/4 cup buttermilk
  • 1/3 cup vegetable oil
  • 1 teaspoon peppermint extract
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with liners.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, combine sugar, eggs, buttermilk, vegetable oil, and peppermint extract until smooth.
  4. Gently fold the wet ingredients into the dry ingredients until just combined; do not overmix.
  5. Fold in half of the crushed peppermint candies and chocolate chips.
  6. Fill muffin cups about three-quarters full with batter.
  7. Bake for 18–20 minutes until a toothpick comes out with moist crumbs.
  8. Allow cooling for five minutes before transferring to a wire rack.
  9. Drizzle with ganache and sprinkle remaining crushed peppermint if desired.
