  • 1/2 cup unsalted butter (for topping)
  • 1 cup packed brown sugar
  • 1/2 cup unsalted butter (for batter)
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a saucepan, melt the butter over medium heat; stir in brown sugar, and mix until smooth.
  3. Arrange pecans in the bottom of the prepared pan; pour the caramel mixture evenly over them.
  4. In another bowl, whisk flour, baking powder, and salt together. Cream softened butter and sugar until fluffy; add eggs one at a time.
  5. Alternate adding dry ingredients with milk to the wet mixture until just combined.
  6. Pour batter over the pecan topping and smooth the surface.
  7. Bake for 35–40 minutes or until a toothpick comes out clean.
  8. Let cool for five minutes before inverting onto a serving plate.
