  • ½ teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon orange zest
  • ½ cup orange juice
  • ½ cup buttermilk
  • ½ cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1 ½ cups fresh or frozen cranberries

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cream butter and sugar in another bowl until light and fluffy.
  4. Add eggs one at a time; then mix in orange zest and vanilla extract.
  5. Alternate adding the dry ingredients with orange juice and buttermilk until just combined.
  6. Fold in cranberries gently.
  7. Pour batter into the prepared pan and bake for about 55–65 minutes until a toothpick comes out clean.
  8. Allow it to cool for ten minutes before transferring to a wire rack.
