  • 1 lb smoked sausage (kielbasa or turkey sausage), sliced
  • 1 1/2 cups uncooked long grain rice
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 1/2 cups chicken broth
  • 1/2 cup barbecue sauce
  • Salt and pepper to taste
  • Optional garnish: chopped green onions or parsley

Instructions

  1. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Sear the sausage slices until browned, then remove from the pan.
  2. Add more oil if needed and sauté the chopped onion for about 5 minutes until translucent.
  3. Stir in minced garlic and cook for about 30 seconds until fragrant.
  4. Add rice to the pan, stirring to toast it gently for about 2–3 minutes until lightly golden.
  5. Pour in chicken broth and barbecue sauce, scraping any bits from the bottom of the pan.
  6. Return the seared sausage to the skillet and bring everything to a gentle simmer. Cover and reduce heat to low.
  7. Simmer for about 18–20 minutes, stirring halfway through.
  8. Let sit covered off heat for an additional 5 minutes before fluffing with a fork and seasoning as desired.
  9. Garnish with green onions or parsley before serving.
