  • 200 g granulated sugar
  • 2 tbsp lemon zest (from 23 large lemons)
  • 270 g almond flour
  • 3 large egg whites (room temperature)
  • 1/4 tsp fine sea salt
  • 1 1/2 tsp pure almond extract
  • 50 g granulated sugar (for rolling)
  • 30 g powdered sugar (for rolling)

Instructions

  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, massage lemon zest into granulated sugar until fragrant.
  3. Sift almond flour into a large bowl and mix in the lemon-sugar blend.
  4. In another bowl, whip egg whites and salt until stiff peaks form.
  5. Gently fold in almond extract and one-third of the almond flour mixture, then incorporate the remaining flour mixture until well combined.
  6. Prepare two shallow bowls with granulated and powdered sugars for rolling.
  7. Scoop out dough using a tablespoon, roll in granulated sugar, then shape into balls and coat with powdered sugar.
  8. Place on the baking sheet, pressing down slightly until cracks form.
  9. Bake for 22-25 minutes or until golden brown on the bottoms.
  10. Allow to cool completely on a wire rack.
