  • 4 boneless skinless chicken breasts
  • salt and pepper (for seasoning)
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 cup chicken broth
  • ¾ cup heavy cream
  • juice of 1 lemon
  • 1 teaspoon zest of 1 lemon
  • ½ cup grated Parmesan cheese
  • 4 cups fresh spinach leaves
  • additional Parmesan cheese for garnish
  • thinly sliced lemon for garnish

Instructions

  1. Pound the chicken breasts to an even thickness and season both sides with salt and pepper.
  2. Heat olive oil in a large sauté pan over medium-high heat. Cook the chicken for about 3-4 minutes on each side until golden brown; then remove from the pan.
  3. In the same pan, sauté minced garlic until fragrant, then add chicken broth, lemon juice, and zest. Scrape the bottom of the pan for flavor. Bring to a boil, reduce heat, stir in heavy cream, and simmer for about five minutes.
  4. Add fresh spinach to the sauce until wilted. Return chicken to the pan and spoon sauce over the top, sprinkling additional parmesan cheese on top before covering for another couple of minutes.
  5. Serve immediately with garnishes like sliced lemon or fresh herbs.
