  • 1/2 cup unsalted butter, softened
  • 1 cup white sugar
  • 2 large eggs
  • 1 tsp vanilla extract

  • 1 cup crushed pineapple, well-drained
  • 1/2 cup icing sugar
  • 2 tbsp pineapple juice

  1. Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream butter and sugar until fluffy. Add eggs one by one followed by vanilla extract.
  4. Fold in sour cream and gradually combine with the dry mixture until smooth.
  5. Gently fold in crushed pineapple.
  6. Pour batter into prepared pan and bake for 30-35 minutes or until a toothpick comes out clean.
  7. While cooling, mix icing sugar with pineapple juice to create glaze. Once cooled, drizzle over cake.
