  • 1/2 cup plain bread crumbs
  • 1/2 cup fresh grated parmesan cheese
  • 4 garlic cloves (minced)
  • 4 oz tomato paste
  • 56 cups beef stock
  • 1416 oz gnocchi (homemade or ready-to-use)

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, parmesan cheese, egg, minced onion, garlic, parsley, basil, red pepper flakes, salt, and black pepper. Mix gently and form into meatballs about one inch in diameter.
  2. Heat olive oil in a large pot over medium heat. Sauté diced onions for 3-4 minutes until translucent. Add diced carrots and cook until softened.
  3. Carefully add meatballs to the pot and brown them on all sides for about 5-7 minutes.
  4. Stir in diced tomatoes and garlic followed by water and beef stock. Mix in tomato paste along with seasonings; bring to a gentle boil.
  5. Add gnocchi and cook according to package instructions until they float (about 3-5 minutes). Serve hot.
