  • 3 eggs
  • ½ cup all-purpose flour
  • 1½ cups Italian-style panko breadcrumbs
  • 2 cups cherry tomatoes
  • 1½ cups fresh basil leaves
  • 1 burrata cheese
  • 2 tbsp olive oil
  • 3 cloves garlic
  • ½ tsp kosher salt
  • ¼ cup dry apple vinegar
  • 1 tsp lemon juice
  • 1 tsp lemon zest
  • 2 tbsp balsamic glaze
  • Salt and freshly ground black pepper to taste
  • Oil for shallow frying

Instructions

  1. Pound chicken breasts to an even thickness, then season with salt and pepper.
  2. Set up three bowls: one for flour, one for whisked eggs, and one for breadcrumbs. Dredge each cutlet in flour, dip into eggs, and coat with breadcrumbs.
  3. Heat oil in a skillet over medium heat (325°F). Fry cutlets for 2-3 minutes on each side until golden brown. Drain on paper towels.
  4. In the same skillet, sauté cherry tomatoes in olive oil until blistered. Add garlic and kosher salt; deglaze with apple vinegar. Stir in basil, lemon juice, and zest.
