  • 2 large eggs
  • 1/2 cup canola or vegetable oil
  • 1/2 cup plant-based butter (room temperature)
  • 2 1/4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 (7 ounce) jar vegan marshmallow creme
  • 3/4 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream

Instructions

  1. Preheat your oven to 350 degrees F and line two cookie sheets with parchment paper.
  2. In a bowl, mix the cake mix, eggs, and oil until a soft dough forms. Use a medium scoop to drop dough onto prepared sheets, spacing them about 2 inches apart.
  3. Bake for 8-10 minutes until edges are set but centers are slightly soft. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
  4. For frosting, beat butter until creamy; gradually add powdered sugar, vanilla extract, and salt. Fold in vegan marshmallow creme until smooth.
  5. To make ganache, heat heavy cream over chocolate chips in the microwave for about 45 seconds; let it sit for a minute before whisking until smooth.
  6. Frost cooled cookies with marshmallow frosting and chill briefly to set. Drizzle with ganache and pipe squiggles using reserved frosting.
