  • 13/4 cups Biscoff cookie crumbs
  • 6 tablespoons unsalted butter, melted
  • ¼ cup lightly packed light brown sugar
  • Pinch kosher salt
  • 16 ounces carrots, peeled and sliced
  • ½ cup pure clover honey
  • ¼ cup granulated sugar
  • 2 tablespoons water
  • 1 teaspoon vanilla extract
  • ½ teaspoon coarse kosher salt
  • 3 large eggs
  • ½ cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix Biscoff cookie crumbs with melted butter, brown sugar, and salt until it resembles damp sand. Press into a 9” pie plate.
  3. Steam or boil carrot slices until tender (20-30 minutes). Blend cooked carrots with honey, sugar, water, vanilla extract, and salt until smooth.
  4. In another bowl, whisk eggs and cream together; fold in the carrot mixture.
  5. Pour filling into the prepared crust and bake for 45-55 minutes until set but slightly jiggly in the center.
  6. Cool completely before chilling in the refrigerator for at least four hours.
