  • 1 lb boneless, skinless chicken thighs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 cup mixed vegetables (optional)
  • Chopped green onions for garnish

Instructions

  1. Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Sear the seasoned chicken in a skillet over medium heat for 3–4 minutes on each side until golden brown.
  3. Mix together BBQ sauce and honey in a bowl; set aside half for later.
  4. Toast uncooked rice in the same skillet for about 1–2 minutes.
  5. Add chicken broth and half of the BBQ-honey mixture to the skillet; stir to combine.
  6. Return seared chicken to the skillet and pour remaining BBQ mixture over it. Cover tightly.
  7. Reduce heat to low and let simmer for about 15 minutes.
  8. If using mixed vegetables, add them after simmering and cook for an additional 5 minutes.
  9. Let sit off heat for 5 minutes before serving; garnish with chopped green onions.
