1/2 cup unsalted butter, cold and cubed
3–4 large peaches, peeled, pitted, and sliced
1/2 cup granulated sugar
2 tablespoons all-purpose flour
1 tablespoon lemon juice
1/2 teaspoon vanilla extract
1/2 cup all-purpose flour
1/4 cup granulated sugar
1/4 cup brown sugar
1/4 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup unsalted butter, melted
Instructions
Preheat your oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
Prepare the crust by mixing flour, sugar, and salt in a bowl. Cut in cold butter until crumbly. Press into the prepared pan and bake for 15–18 minutes until lightly golden.
For the peach filling, toss sliced peaches with sugar, flour, lemon juice, and vanilla extract.
Create the crumb topping by mixing flour, sugars, cinnamon, and salt in another bowl, then stir in melted butter until crumbs form.
Spread the peach filling over the cooled crust and sprinkle with crumb topping. Bake for 45–50 minutes until golden and bubbly.
Allow to cool completely before slicing into squares.
