  • 2 medium sweet potatoes, peeled and diced
  • 1 avocado, sliced
  • 1 cup cottage cheese (low-fat or full-fat)
  • 1 yellow onion, diced
  • 2 tbsp olive oil
  • 1 taco seasoning packet (or homemade)
  • 2 tbsp hot honey
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil and spices. Spread on a baking sheet and roast for 40–45 minutes.
  2. In a skillet over medium heat, sauté diced onion in olive oil until softened. Add ground beef and taco seasoning; cook until browned.
