  • 1 pound ground chicken breast
  • 3 bell peppers (any color)
  • ⅔ cup uncooked white rice
  • ½ cup cherry tomatoes
  • ½ cup kalamata olives
  • ½ cup feta cheese (plus more for topping)
  • 2 tablespoons fresh dill
  • 1 small red onion
  • 2 cloves garlic
  • 1 zucchini

Instructions

  1. Preheat the oven to 350°F.
  2. Cook the rice according to package instructions.
  3. Slice bell peppers in half and remove seeds; place cut-side up in a baking dish.
  4. In a skillet, heat olive oil over medium heat. Add ground chicken and season with salt and pepper; cook until no longer pink.
  5. Stir in diced onion, garlic, zucchini, and Italian seasoning; cook for an additional 2 minutes.
  6. In a bowl, combine cooked rice with the chicken mixture, cherry tomatoes, olives, feta cheese (reserve some for topping), and dill.
  7. Generously stuff each pepper with the mixture and top with remaining feta cheese. Pour water into the baking dish.
  8. Cover with foil and bake for 40–45 minutes. Serve warm with lemon wedges.
