  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese (or nutritional yeast)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh oregano, chopped

  • 1/2 teaspoon black pepper
  • 1 egg
  • 1 cup orzo pasta
  • 2 cups vegetable broth or water
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 2 tablespoons olive oil

Instructions

  1. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese (or nutritional yeast), garlic, oregano, salt, pepper, and egg. Mix gently until just combined. Form into small meatballs about two inches in diameter.
  2. Heat olive oil in a skillet over medium heat. Cook meatballs until golden brown on all sides and cooked through. Set aside.
  3. In the same skillet, add vegetable broth (or water) and bring to a boil. Stir in orzo along with lemon zest and juice. Reduce heat and simmer until orzo is al dente.
