  • lbs sirloin steak, cut into bite-sized cubes
  • lbs baby potatoes, halved or quartered
  • 4 tablespoons olive oil (divided)
  • 4 tablespoons butter
  • 56 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried Italian herbs
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add halved potatoes, season with salt, pepper, and paprika. Cook for about 15 minutes until golden and fork-tender, stirring occasionally. Remove from skillet.
  2. Season sirloin cubes with salt, pepper, and Italian herbs. In the same skillet, add remaining olive oil and butter. Sear steak in batches for 2–3 minutes per side until browned but not overcooked.
  3. Reduce heat to medium-low; add remaining butter and minced garlic to the skillet. Sauté until fragrant (about one minute). Return the cooked potatoes to the pan.
  4. Toss everything gently to coat in the buttery garlic mixture; heat through for another minute or two. Garnish with fresh parsley before serving.
