  • 2 cans chickpeas (15 oz each), drained and rinsed
  • 4 cups vegetable broth
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh dill

  2. Stir in minced garlic; cook for an additional minute until fragrant.
  3. Add turmeric, salt, and black pepper; mix well to coat the vegetables.
  4. Pour in chickpeas and vegetable broth; bring to a boil, then reduce heat and simmer for 20 minutes.
  5. For creaminess, blend half of the soup using an immersion blender, then return it to the pot.
  6. Stir in fresh lemon juice and dill; adjust seasoning if needed before serving warm.
