  • 5 ounces Boursin cheese (Garlic & Fine Herbs)
  • 1 cup heavy cream
  • 1 cup sliced mushrooms
  • 1/2 cup chicken broth
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • Salt and black pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. In a skillet over medium heat, heat olive oil and butter. Sear the chicken for about 5–6 minutes per side until golden brown. Remove from the skillet.
  3. Add sliced mushrooms to the same skillet and sauté until browned (about 5–6 minutes). Stir in minced garlic and cook for an additional minute.
  4. Deglaze the pan with chicken broth, scraping up brown bits. Let it simmer briefly.
  5. Mix in Boursin cheese and heavy cream until creamy and slightly thickened.
  6. Return the chicken to the skillet, spoon sauce over it, and simmer for a couple more minutes.
  7. Garnish with parsley before serving.
