  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a lined 9×13-inch baking pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, mix eggs, brown sugar, granulated sugar, oil, applesauce, and vanilla until smooth.
  4. Fold dry ingredients into wet mixture until just combined; add carrots and nuts if desired.
  5. Pour batter into the prepared pan and bake for about 25–30 minutes or until a toothpick comes out clean.
  6. Let cool completely before frosting with the cream cheese mixture made by beating softened cream cheese and butter with powdered sugar until smooth.
