  • 8 ounces cream cheese (softened)
  • 1/4 cup unsalted butter (softened)
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • 1/4 cup chopped pecans (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a baking dish with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat eggs with granulated sugar, brown sugar, vegetable oil, and vanilla until smooth.
  4. Gradually mix dry ingredients into the wet mixture until just combined.
  5. Fold in grated carrots and optional pecans.
  6. Pour batter into the prepared pan and bake for 25–30 minutes or until a toothpick comes out clean.
  7. Allow bars to cool completely before frosting with the cream cheese mixture made from softened cream cheese and butter combined with powdered sugar and vanilla.
