- 2 pounds boneless skinless chicken thighs
- Kosher salt and pepper (to taste)
- 1/3 cup apple juice or chicken broth
- 3/4 cup brown sugar
- 3/4 cup soy sauce
- 2 cloves garlic (minced)
- 2 tablespoons cornstarch
- 3 tablespoons cold water
- Season the chicken thighs with salt and pepper; place them in the crockpot.
- In a bowl, mix apple juice or chicken broth, brown sugar, soy sauce, and minced garlic. Pour over the chicken.
- Cook on low for 4 hours or high for 3 hours.
- About 30 minutes before serving, mix cornstarch with cold water until smooth; add to the sauce to thicken.
- Serve over rice or noodles and enjoy!
