  • 2 tablespoons balsamic vinegar
  • 1½ tablespoons honey (or maple syrup for a vegan option)
  • 1 teaspoon Dijon mustard (optional)
  • 1 small garlic clove, finely minced (optional)
  • Red pepper flakes (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Trim and halve the Brussels sprouts, ensuring they are dry.
  3. Toss the halved sprouts in a large bowl with olive oil, salt, and pepper until evenly coated.
  4. Spread the seasoned sprouts cut-side down on a parchment-lined baking sheet. Roast for 20–25 minutes, flipping halfway through until golden brown and crispy.
  5. In a small saucepan over low heat, combine balsamic vinegar, honey, and Dijon mustard if using. Simmer for 2–3 minutes until slightly thickened.
  6. Remove roasted sprouts from the oven and toss them with the warm glaze immediately.
