  • 1 pound chicken tenderloins (or chicken breasts cut into strips)
  • ½ cup flour
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 eggs
  • 2 tablespoons water (or milk)
  • ⅔ cup shredded sweetened coconut flakes
  • ⅔ cup panko bread crumbs
  • Oil for frying

Instructions

  1. In a shallow bowl, combine flour, chili powder, salt, and pepper.
  2. In another bowl, whisk eggs with water (or milk) to create an egg wash.
  3. Set up two additional bowls with shredded coconut flakes and panko bread crumbs.
  4. Coat each chicken tender in the flour mixture, dip into the egg wash, then roll in the coconut and panko until fully covered.
  5. Heat oil in a skillet over medium heat. Fry tenders for about 2-3 minutes per side until golden brown.
