  • 1/4 cup balsamic vinegar
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a round baking dish.
  2. In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, thyme, salt, and pepper.
  3. Layer half of the sliced potatoes in the dish and drizzle with half of the balsamic mixture.
  4. Add the remaining potato slices as another layer and top with the rest of the balsamic mixture.
  5. Cover with foil and bake for 45 minutes to soften the potatoes.
  6. Remove foil; if desired, sprinkle grated cheese on top. Bake uncovered for an additional 15-20 minutes until golden brown.
