  • ¾ cup unsalted butter, melted
  • 16 oz (2 blocks) full-fat cream cheese, softened
  • ½ cup granulated sugar (for the filling)
  • 2 large eggs
  • 1 tablespoon lemon zest (about 1 lemon)
  • ¼ cup fresh lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, mix graham cracker crumbs, flour, sugar, salt, and melted butter until combined.
  3. Press two-thirds of the crumb mixture into the prepared pan to form the crust.
  4. In another bowl, beat cream cheese until smooth; gradually add sugar and eggs. Mix in lemon zest and juice until well blended.
  5. Pour filling over crust; sprinkle remaining crumb mixture on top.
  6. Bake for 30–35 minutes until the center is set but slightly jiggly.
